The interview

Eric Fontanini is a 30 year old chef and food consultant. He lives in Ibiza, Spain.
DS: How did you hear about Dailysingle? What are you expecting from being on the front page?
Eric Fontanini: I've been contact by friend of mine. He sent me a link and recommended me to do it. I love the idea. I want to share my passion with more people.
DS: What are the most memorable years of your life and what happened to make them so memorable?
Eric Fontanini: Some years have been more intense than others. Here are few of them. 1997: I lost my father and that just made my passion for food and restaurant even more excessive. I was full of energy and wanted to be the best to make my father proud of me. I started to work nights and weekends in a Guy Savoy restaurant. That was my really first time in a kitchen; pressure, customers, responsibilities. I love it. I want to thank my father for having always be pushing me to do what I wanted and my mother for being supportive. This year was the beginning of my carer and made me who I am today. 2002: I graduated and took the "sous-chef" position in Alain Ducasse restaurant in Paris. One more time new challenges, new responsibilities and the same energy for this job/passion.
DS: Where were you born and where do you live now?
Eric Fontanini: I was born and raised in Paris until my 25th year when my life took me around the world. I ended up living in San Fransisco for a few years. Finally back to Paris something was missing, some more nature maybe. I'm not sure about what yet but I decided to moved to Ibiza in April 2010 and I am in love with the island. People are great and it is amazing to be working in a kitchen with a view on the beach... Priceless!

DS: How would you best describe yourself?
Eric Fontanini: Excessive and never satisfied but always enjoying life.
DS: What are the must-haves in your daily wardrobe?
Eric Fontanini: Chef shirt and black pants, Pierre Hardy tennis shoes and jeans.
DS: Who do people tell you you look like?
Eric Fontanini: I have to admit that the comment I get the most is "you're are to much yourself". I guess I look like myself. I am not sure this is a compliment but this is what I get every day.

DS: What is the compliment you most frequently get?
Eric Fontanini: Something like "We love your food chef!". It's always good to get your work appreciated by other people
DS: How did you end-up being a chef and food consultant?
Eric Fontanini: I don't really know. Sometime in life things just slide in one direction. Everything is so clear in your mind that you don't even think about it and the next day you're working in the kitchen. The love for food has always been there and I started cooking for the family every Saturday with my father when I was only 8 years old. That may be an answer?

DS: Can you tell us more about your job?
Eric Fontanini: My job is to make my customers happy. All of you have wishes and my job is to make them happen. This is not a regular job. You do it for love not for money. This job becomes part of your life and all the hours and energy you need to put in it make you a better person. I want to do my job as long as I will have the passion for it. Maybe not in the kitchen every day but I love restaurants. They are the places where I feel good; the ambiance, the waiters and the chefs working together...
DS: Let's talk more about you and your tastes. Any hobbies? What do you like to do in your free time? Any thing you like and recommend?
Eric Fontanini: Kitesurfing season is starting in Ibiza and I've also been diving few time a month. Do I need to mention again that I love restaurants? :) I like to go out too and Ibiza is the place for this; good DJs and very nice parties.
DS: What is a typical week for Eric Fontanini?
Eric Fontanini: Every week is different but I often start around 8am with a local farmers market. I visit suppliers to find new products. I work on new recipes. I can also go for a nice morning dive in the ocean before work!
DS: Some quick questions: What is the first thing you do in the morning?
Eric Fontanini: Open my eyes, then I'll see...
DS: What is your favorite word?
Eric Fontanini: "let's go"
DS: What it your favorite quotation? Or make your own for posterity...
Eric Fontanini: Nothing is impossible if you really want it.

Eric Fontanini: Closing el chiringuito restaurant and going back to my consultant agenda. I will be opening few restaurants trough the winter and get back in Ibiza next May.
